The Ninth Wave is a cookbook, yes, but it's also a book about a young Canadian chef falling in love with Scotland, and about the challenges and joys of cooking with the freshest ingredients in a remote spot. Oh, and there's a fair bit of local color, entertaining digressions about playing pool at the local pub, fishing, steampunk, debates about the merits of different potato varieties, and the rewards of growing obscure herbs. Lamont infuses her recipes with global touches. There are nods to Japan, Portugal and classic French cuisine, but the food is rooted in a connection to the land and sea. It's not just seafood, either; there's plenty of game, bold desserts and other surprises. This is a lavish book, perfect for ambitious home cooks looking for rugged inspiration from Scotland. 192 page paperback book.
