First, only real vine fruits (sultanas and currants) are used in this cake - no green apple pieces with artificial coloring! Honey and ground cinnamon give the cake an unusual richness even before the brandy is added. On top of the cake is a layer of almond marzipan, and finally the entire cake is coated with royal icing. This icing creates a hard shell that keeps the cake moist until you cut into it on Christmas day. Please store this in a cool dry place until you are ready to enjoy.
