Edinburgh used to be called Auld Reekie as it was the old city with lots of indoor hearths spewing smoke into the densely populated old town. Soot from smoke still cloaks the cobbles and houses on the Royal Mile. This cheese takes it name from Edinburgh, but the cheese is lightly smoked to give a woody flavor. The hard farmhouse cheese has a salt rubbed rind and is made from raw, unpasteurized cow's milk. Each wedge weighs at least 8 ounces. From Cambus O'May, one of Scotland's new artisanal cheese makers.
