Maisie's Kebbock was developed by Humphrey Errington for his mother-in-law who didn't care for blue cheeses, but liked her cheese creamy and soft, not hard and crumbly like a cheddar. Aged for 90 days in a simple round shape, this cheese develops a natural rind like a brie (with a light ammonia scent).
