Ginger is a special treat in Scotland, associated with feasts, weddings, even funerals. Imported from Jamaica into Glasgow, is was prized for the spicy flavor. Now Mother Mae, my husband Andrew's grandmother, may never have actually added it to her shortbread, but we have used her secret to make this bag of ginger shortbread mix. Her secret to perfect shortbread was her vanilla infused sugar and a touch of rice flour. Her picture graces each bag 14 ounce bag of Ginger Shortbread Mix and each bag will fill two of our Shortbread pans with buttery, mouthwatering shortbread. All you do is add two sticks of unsalted butter and blend, press the mix in the pans and bake. How easy is that?
